The Book of Tea, written by Zen priest Eisai in 1191, discusses green tea’s medicinal qualities, which include: easing the effects of alcohol, acting as a stimulant, curing blotchiness, quenching thirst, eliminating indigestion, curing beriberi disease, preventing fatigue, and improving urinary and brain function. Over the centuries, and up to the present day, green tea has been credited with providing a wide variety of health benefits.
Japanese green tea is commonly graded depending on the quality and the parts of the plant used as well as how they are processed. There can be large variations in both price and quality within these categories. The best Japanese green tea is said to be that from the Yame region of Fukuoka and from the Uji region of Kyoto, known for its clean environment and excellent tea production, which is where our green tea is from.
A finely powdered tea primarily used in the tea ceremony, has now become popular for daily use. It is traditionally made in a tea bowl, mixed with a bamboo whisk. Matcha is also a popular flavor of ice cream and other sweets in Japan.

Gyokuro is a fine and expensive tea that is grown under the shade, rather than the full sun, for approximately 20 days. This causes amino acids and caffeine in the tea leaves to increase and bitterness to decrease, giving rise to a sweet taste and distinct aroma.
